May Meeting

I am so excited for our May 2nd meeting... it will be so much fun! We are having a bake off. There will be three categories: homemade, modified to be GF, or from a "mix," (please make sure to include an ingredients list with your baked good!) There will be prizes for the winners in each category! **ANY AGE CAN BAKE!** If we have enough kid/teen RSVP's, we may be able to have a special kid/teen baking challenge (: That would be exciting! Please bring your delicious, GF, baked goods to the meeting at Paradise Valley Retirement Community. The meeting starts at 7pm, and is located at: 11645 North 25th Place, Phoenix, AZ 85028. There is no cost to the meeting, but we do encourage you to bring GF food donations for our food drive!

I hope to see you there!

Celiac Travel Cards

Hi Everyone!

I'm traveling this weekend (inside the US though..) so I was inspired to do a post about GF travel. Aside from bringing some of your own snacks, I find that having GF restaurant cards is very helpful.

GF Passport Dining Cards

These are two websites that have GF dining cards that I think are awesome! They have them in multiple languages and are so helpful!

GF Homemade Veggie Burgers!

I thought I would share this recipe with everyone! I made it for dinner and it was delicious. In fact, it was so delicious that it didn't last long enough for a picture ):

1/2 cup black beans
1/4 cup garbanzo beans
1 green bell pepper
1/4 red onion
1/2 cup quinoa
1/2 cup corn flour
1/2 teaspoon garlic powder
1/2 teaspoon turmeric
pinch of salt and pepper

The directions are very simple!

Boil the quinoa until it's nice and "fluffy." Put the black and garbanzo beans into a bowl and mash them together. Next, chop the pepper and onion into some small, and some medium sized pieces. Add all of the ingredients together and form into little patties. If the burger doesn't stick together well, you should double the amount of corn flour! Cook the patties on the stove for about 5 minutes on each side. I served these on a lettuce bun with avocado slices, mustard and hummus!  ENJOY!

Gluten Free Passover

Although I won't be eating these this year due to their eggs, I have had these Matzo before, and they are delicious! You can crush them up and make them into Matzo balls!
Here's the site! Matzo GF

Also, I have the ingredients for my favorite GF/Vegan Latkes... a holiday staple! Enjoy

Gluten Free Latkes
6 starchy white potatoes, peeled if you don’t like the skins
1 medium onion (we like the sweet red ones)
1 large or 2 smaller zucchini
2 carrots, peeled
½ tsp sea salt, or to taste
¼ tsp pepper
¼ cup of organic non-GMO corn starch or potato starch
1 ½ -2 cups Garbanzo bean flour
Safflower oil or your favorite oil for frying
If using a food processor:
Use the grating blade to shred the potatoes, onion, zucchini and carrots.
If shredding by hand, use a grater to shred all the potatoes, zucchini and carrots. Dice the onion as finely as possible.
Put all vegetables in a large mixing bowl and blend.Add the starch of your choice and mix.Allow it to dissolve for a couple minutes and get sticky from the moisture of the potatoes.
Add the salt, pepper and flour combining well. The mixture should get sticky and be able to hold together and form well.Use more or less flour to get to this consistency.Let mixture sit while heating up the oil.
In a non-stick skillet, add the oil for frying and heat on medium-high heat.Do not let the oil smoke—it too hot!Turn me down! You want to have a good amount of oil in your pan because these babies love to suck up the oil and get crispy good.
While the oil is heating up, set your oven to warm to keep the latkes warm until you’re ready to serve. Also have a plate with paper towels ready to soak up their oil when you first bring them out of the pan.
When the oil is hot and ready, take a large cookie scooper and scoop the latke mixture into the pan and press them flat with a spatula. If you don’t have a scooper, just use your wet hands and roll into medium balls and flatten with spatula.Fry the latkes on one side for about 4-5 minutes, or until they are golden brow.Flip and fry for another 4 minutes. We like ours a bit crispy here so reduce the frying time by a minute if you want them less crisp.
Transfer to the paper towel plate and to dry and them place in warm oven on baking sheet.Continue the process until you’re out of mixture. Munch on a latke while completing, it takes some time.
